To make our tzatziki, we started off with Greek yogurt to provide that perfect, thick texture. From there, we combined cucumber, organic vinegar, some garlic, and a little dill. Just a little mint added a wonderful, minty lightness to the recipe.
All you have to do is combine all the ingredients in a medium bowl and stir until fully incorporated.
- 2 cups plain Greek yoghurt
- 2 cups diced cucumber
- 1/2 cup fresh dill minced
- 2 teaspoons fresh mint minced
- 1 tablespoon organic vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Tzatziki is the perfect compliment to grilled meats and vegetables. It’s served on the side with warm pita bread triangles for dipping, and is also used as a condiment for souvlaki.
